Quick Start to Kombucha | First and Second Ferment shows from beginning to end how to brew and ferment kombucha. This blog is in support of the video that actually shows you how to make the Kombucha. Please go to the bottom of this post to see the video. We go over the first ferment which is plain fermented black tea and sugar. Then we show you how to add flavor and carbonate the beverage with a second ferment.

Below we have three recipes for Quick Start to Kombucha | First and Second Ferment. The recipe shown in the video is for 1-1/2 gallons, but you can make smaller batches as well. We have adjusted ingredient quantities below so you can just choose the size that works for you.

Quick Start to Kombucha Recipes

Kombucha Recipe for 1-1/2 Gallons

  • 21C of Water
  • 1-1/2C of Sugar
  • 12 Tea Bags
  • 3C of Starter Kombucha
  • SCOBY
  • 4C of Fruit Juice (I used cherry but almost any fruit will work) Note: Adjust the quantity of fruit juice to taste (more or less than 4C)

Kombucha Recipe for 1 Gallon

  • 14C of Water
  • 1C of Sugar
  • 8 Tea Bags
  • 2C of Starter Kombucha
  • SCOBY
  • 2-1/2C of Fruit Juice (I used cherry but almost any fruit will work) Note: Adjust the quantity of fruit juice to taste (more or less than 2-1/2C)

Kombucha Recipe for 1/2 Gallon

  • 7C of Water
  • 1/2C of Sugar
  • 4 Tea Bags
  • 1C of Starter Kombucha
  • SCOBY
  • 1-1/2C of Fruit Juice (I used cherry but almost any fruit will work) Note: Adjust the quantity of fruit juice to taste (more or less than 1-1/2C)
