Anise Hyssop Agastache foeniculum

Anise hyssop Agastache foeniculum is a herbaceous perennial plant in the mint family that attracts loads of pollinating insects in mid-summer.  It is native to the praries and plains of the United States and Canada.

The plant is quite hardy, living in USDA hardiness zones 3 to 8.  Each plant grows 2 to 4 foot tall and has a spread of 1 to 3 feet tall.  While Anise Hyssop is a perennial, it readily reseeds itself and can form a dense plant if left unchecked.  Documentation online says it likes full sun, but I’ve grown it in partial sun and it has done wonderfully.

The leaves have a wonderful anise (black liquorish) smell and taste.  It is used in herbal teas, to flavor jellies, fresh eating and adds a great taste to a salad mixed with other greens. The best time to harvest and dry the leaves is just after the flowers bloom.  While you can harvest and dry leaves at any time, the oils are strongest right after flower bloom.
