This post goes over How to Make Homemade Zucchini Bread. This involved zucchini harvested from my garden and a number of other ingredients that you likely already have around your kitchen. This is a tasty and fun way to use some of your excess harvest.
3 c shredded zucchini
1 2/3 c sugar
2/3 c vegetable oil
3 c flour
2tsp baking soda
1tsp ground cinnamon
½ tsp ground clove
½ tsp baking powder
½ c ground nuts
½ c raisins
Step 1 – Preps
Grease the bottom of your loaf pan and preheat the oven to 350 degrees. For the loaf pans, if you are using 8-inch loaf pans you will need 2. If you are using 9-inch loaf pans, one is fine.
Step 2 – First Set of Ingredients
In a large bowl, stir together the zucchini, sugar, oil, vanilla, and eggs.
Step 3 – Add More Ingredients
After you have thoroughly mixed in the ingredients in step 2, add the remaining ingredients except for the nuts and raisins. Thoroughly stir the mixture again.
Step 4 – Add More Stuff
Add the nuts and raisins and gently stir the mixture.
Step 5 – In the Pan
Make sure you did step one above and greased the bottom of the pan! Then, put the mixture into the loaf pan or loaf pans.
Step 6 – Bake
Bake at 350 degrees for just over an hour with 8-inch pans or for about one hour and twenty minutes for a nine-inch pan. To check and see if they are done, stick a toothpick in the top (see note below). If the toothpick comes out clean, the zucchini bread is ready to come out. If the toothpick comes out with a little wet batter on it, put the bread back in for another 10 or 15 minutes.
When putting a toothpick in the loaf to see if it is done, watch where you put it. At first I put the toothpick in the top crust part of the loaf and it came out clean. Then I noticed that the crust had split on the top. So I put the toothpick in where the split was and it came out with batter. What was happening is the crust part was hard and was scraping off the batter. So always stick the toothpick in where the crack is.
Step 7 – Remove from Oven
Once done, remove the bread from the oven and put on cooling racks for five to ten minutes.
Step 8 – Remove from Pan
Using a butter knife, loosen the bread from around the pan and then remove the bread from the loaf pan. I have found that you can simply dump the bread out onto the cooling rack. Then flip the bread over so the top is facing up. Let cool for a few hours.
Step 9 – Slice and Enjoy
Slice the bread using a bread knife. If you can avoid the temptation to eat it all, the bread freezes nicely just by wrapping it in saran wrap. If you are going to freeze it, make sure you label it well.
